- Add the meat and grated cheese to a large bowl. Mix all the remaining ingredients in a small bowl and let it sit for about 5 minutes. Add the meat and mix lightly with the cheese and fork, stirring lightly.
- Pour the meat mixture into the pan with the bacon and top with the rest of the bacon. Try to distribute it evenly over the entire surface of the meatball. Cover with foil (I used 2 layers) and bake for about an hour and a half until a meat thermometer reads 160F.
- Remove from oven and open. Uncovered in the oven for another 15-20 minutes until the bacon is golden brown and crispy. Also, if desired, remove and add a layer of tomato sauce on top and bake for another 10-15 minutes, until the tomato sauce crystallizes. (Or use a chicken and watch it cook, it won't take long.)
- When everything is ready, leave it for 10 minutes. Cut and serve. It goes well with mashed potatoes, baked, or baked as a roll.
